This leek and potato soup will warm your fingers and your heart. I add apple for an unusual twist and a delicious fruity, slightly sweet flavour.

This is my adaption of my mother’s Greek courgette pie, with lots of leek, feta and lemon zest, with a sprinkling of sesame seeds.
